While doing some holiday shopping at Perkins Rowe, I decided to play Russian roulette with my taste buds and try out a Southern dish from a California pizzeria. It’s pretty much a rule of thumb that you don’t try Cajun dishes from non-locals, but California Pizza Kitchen boasts that their Jambalaya Fettuccine is a favorite among diners, and I was feeling dangerous. This pasta dish is a twist on a Southern classic with a unique oil-based sauce with all the flavors of blackened seasoning. Chicken, shrimp, crawfish, Andouille sausage and Tasso ham are tossed in spicy Cajun sauce and rest on a bed of fettuccine. Pulling off a traditional Southern classic is no easy task for a West Coast import, but CPK impressed me with their efforts.
