
From Babysitting to the Kitchen: Chef Albina and Chef Logan’s Special Coastal Collaboration
Tomorrow night at Jabby’s Pizza on Highland Road, Chef Albina will once again trade pizza boxes for white tablecloths as she transforms the space into an intimate Mediterranean escape.
On March 4 at 6:30 PM, guests in Baton Rouge will gather for a Mediterranean Coastal Dinner created in collaboration with Chef Logan of Poiesis Private Dining. While the menu promises bold coastal flavors and elegant presentation, this evening carries something even more meaningful behind the scenes.
Chef Albina and Chef Logan’s connection goes back decades. When Albina and her family immigrated to the United States in 1999, Logan’s parents played a significant role in helping them during that transition. Their support was crucial during those early years. In fact, Albina’s mother babysat Logan for two years, and the families became deeply connected. What started as friendship and support during a life changing chapter has now come full circle in the form of a collaborative dinner.
“It’s amazing how the world works,” Albina shared. “Now I get the opportunity to cook alongside Logan and share this special evening with all of you.”
The menu reflects the care and creativity both chefs bring to the table. The night begins with focaccia topped with herb oil foam, followed by Mediterranean shrimp ceviche bright with coastal flavor. A whole roasted Mediterranean snapper anchors the seafood course, paired with a vibrant red cabbage salad. Guests will then enjoy lamb chops served with couscous before ending the evening with a raspberry and pistachio roll cake.
The dinner is $85 per person and is bring your own wine, allowing guests to pair their favorite bottle with the multi course experience. Seats are limited and reservations are required, with only a few spots remaining.
For one evening, a neighborhood pizza kitchen becomes a refined coastal dining room filled with story, collaboration, and heart. Chef Albina and Chef Logan are especially excited for this night, not just because of the menu, but because of what it represents.
